LAYER 1 - Crust
1 cup cashews
½ cup Medjool dates (sweetest but any work)
1 tablespoon vanilla extract (optional)
pinch of salt (optional)
LAYER 2 - Filling
2 cups dates
Boiling water
1 cup nut butter (almond or hazelnut if avoiding peanut butter)- crunchy or creamy (or add chopped nuts to creamy butter if u like crunchy
pinch of salt (optional)
TOPPING
½ cup peanuts
Melted chocolate
Soak dates with boiling water for 30 minutes (do this before Layer 1 so you save time).
Prepare Layer 1 - Crust.
Combine crust (layer 1) ingredients in a food processor or blender and blend. Transfer onto dish lined with parchment paper and spread evenly. Let it set in the freezer while you are making the next layer.
Prepare Layer 2 - Filling.
Drain soaking dates and transfer into a blender or processor and pulse until paste is created. Pour into a bowl, add nut butter and salt if you want and mix.
Assemble the bars and freeze.
Pour the batter onto the crust layer, spread peanuts around, and freeze for a few hours or overnight.
Add final topping.
Melt your fave chocolate by itself or with some coconut oil and dip them in then freeze again to set (15 min or so).
