PREP: 15 min | BAKE: 7 min | SERVINGS: ?
DRY INGREDIENTS
2 cups oat flour
1 teaspoon baking soda
½ cup of coconut sugar
½ cup chocolate protein powder
½ teaspoon salt
OTHER INGREDIENTS
⅓ cup raisins (always can add more or less)
⅓ cup apricots
½ cup chocolate chips or measure with your heart
4 tablespoons of coconut oil (melted)
½ cup oat or nut milk
½ teaspoon vanilla
Preheat oven to 500 degrees Fahrenheit.
In a large bowl mix all dry ingredients until lumps are gone and make sure that baking soda is distributed throughout the mix.
Add the OTHER ingredients and mix until it sticks together.
NOTE: You may need to add another tablespoon or two of milk depending on what milk you use. The batter should be really dry but stick together — not moist or sticky.
Use your hands and smoosh big balls of batter together, whatever size you want, and SLIGHTLY flatten them. They should be thick and round.
Put the round, slightly flattened balls on a baking sheet. (You can use parchment paper so they don’t stick and are easy to clean.)
Put the baking sheet in the oven, then turn off the oven.
No heat, oven off.
Let cookies sit in the oven for 7 minutes.
Remove and let sit out for 15 minutes before eating.
