Pistachio Pie
PREP: 20 min | SET: 1 hr | FREEZE: 3 hrs | SERVINGS: 8
CRUST
1 cup walnuts
6 pitted dates
1 cup rolled oats
1 tablespoon vanilla extract
FILLING
1 cup roasted or raw pistachios
1 can coconut cream
5 pitted dates
TOPPING
1 bag of dark chocolate chips
1 cup of coconut milk or nut milk
Make Crust
Blend all ingredients and press into pie pan.
Add Filling & Freeze
Blend all ingredients.
Pour onto crust.
Freeze crust and filling for 1 hour.
Add Topping & Set
Mix and mel both ingredients in sauce pan on medium-low heat.
When you have a creamy dark chocolate sauce, pour and spread on frozen pie.
Put back in freezer for a few hours.
Serve & Store
Cut and serve OR store in freezer or fridge.
