1 medium yellow onion, diced
2 bell peppers (1 red, 1 green), diced
1 medium zucchini, diced
8 oz mushrooms, sliced
1 jalapeño, seeded and minced
4 cloves garlic, minced
1 (15 oz) can black beans, drained and rinsed
1 (14 oz) can fire-roasted diced tomatoes
1 (12-16 oz) bag frozen cauliflower rice
1 cup frozen corn
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon dried oregano
Salt and black pepper to taste
Juice of ½ lime
FOR SERVING
Fresh pico de gallo
Sliced avocado
Shredded romaine or lettuce
Fresh cilantro, chopped
Lime wedges
Hot sauce (optional)
Heat oil in a large skillet over medium-high heat. Add onion and cook 2-3 minutes until softened.
Add bell peppers, zucchini, mushrooms, and jalapeño. Cook 5-6 minutes until vegetables are tender.
Add garlic and cook 30 seconds until fragrant.
Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook 1 minute.
Add black beans, fire-roasted tomatoes, cauliflower rice, and corn. Stir to combine.
Cover and cook 5-7 minutes until cauliflower rice is heated through and flavors meld.
Squeeze lime juice over the skillet and stir.
Serve topped with pico de gallo, avocado, lettuce, cilantro, lime wedges, and hot sauce.
NOTES:
Swap cauliflower rice for regular rice or quinoa—cook separately and stir in at the end.
Add vegan cheese or cashew crema for richness.
