Miso Glaze

A simple sweet and savory glaze for tofu, tempeh, or roasted vegetables.
2 tablespoons soy sauce
1 tablespoon maple syrup
1 tablespoon apple cider vinegar
1 clove garlic, minced
Pinch of red pepper flakes
OPTIONAL ADD-INS
1 teaspoon grated ginger
1 teaspoon Dijon mustard
Whisk all ingredients together in a small bowl until combined.
Use as a marinade or brush onto tofu, tempeh, or vegetables before or during cooking.
NOTES:
Add ginger for a bit of warmth or Dijon for some tang.
Works great as a marinade (~30 minutes) or as a glaze brushed on while roasting.
