Miso Glaze

A fast, savory-sweet glaze for crumbled or cubed tofu, roasted vegetables, or grain bowls.
1 tablespoon miso
1 tablespoon soy sauce
1 teaspoon maple syrup
1 tablespoon water
Whisk all ingredients together in a small bowl until smooth.
Add to the pan off-heat or on low. Toss 30 seconds to coat.
NOTES:
Whisking the miso with the liquids first prevents clumping in the pan.
The sweetener balances the salt from the miso and soy. Sugar works in place of maple syrup.
For a thinner glaze, add another splash of water. For a thicker one, reduce briefly over low heat before tossing.
